Recipe: Spring Eating Clean Salad

Summer is right around the corner and who says you can’t eat deliciously satisfying food while still staying on track of your health goals. Well, you most definitely can with this Spring Eating Clean Salad.  It’s light refreshing and doesn’t require you being in the kitchen all day. And it makes a great side to bring to all those memorial day parties and barbecues.

INGREDIENTS

2 pint containers cherry tomatoes, halved

1 can chick peas

2 cucumbers diced

2 cloves garlic

2 avocados diced

¼ cup red onion

1 tbsp fresh basil chopped

1/4 cup Parsley, fresh

2 tbsp olive oil

Salt and pepper to taste

DIRECTIONS

  • Combine the tomatoes, cucumber, avocado and onion in a medium sized bowl
  • Drain, rinse and add chickpeas to bowl
  • Add parsley, olive oil and salt and pepper to taste
  • Refrigerate until ready to serve over a bed of lettuce

*If making ahead, wait to add the chopped avocado until right before serving
