Healthy Super Bowl Snacks

Too often though, those snacks are laden with high calories, high fat and low nutritional content. Want to participate in the fun without sacrificing your eating habits? Check out these 3 healthy Super Bowl snack recipes!

Zucchini Fries

Ingredients

  • 2 zucchini
  • 1 egg white
  • 1/4 cup milk
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup seasoned breadcrumbs
  • Vegetable cooking spray

Directions

Preheat oven to 425°. Cut zucchini into 3-inch sticks. Whisk an egg white in a small bowl, and add milk. Combine Parmesan and seasoned breadcrumbs in a separate bowl. Dip zucchini sticks into egg mixture, and then roll in breadcrumb mixture. Coat a baking sheet with cooking spray, and place zucchini on sheet. Bake for 25–30 minutes or until golden brown.

Buffalo Cauliflower Bites

Ingredients

  • 6 cups of fresh cauliflower florets
  • 2 teaspoons garlic powder
  • a pinch of salt
  • a pinch of pepper
  • 1 tablespoon butter, melted
  • ¾ cup hot sauce

Directions

Preheat oven to 450. Spray a baking sheet with cooking oil, or olive oil. Set aside. Mix the garlic powder, salt, pepper, melted butter, and hot sauce in a small bowl. Add the cauliflower into a large gallon-sized bag, pour the buffalo sauce into the bag. Shake until the cauliflower florets are fully coated. Spread on a baking sheet. Bake for 20 minutes. Serve with ranch or blue cheese dressing, if desired.

Sun-Dried Tomato Hummus

Ingredients

  • 2 (15 oz) can chickpeas, drained and rinsed
  • 2 clove garlic, peeled and crushed
  • 1 jar (10 Oz) sun-dried tomatoes in olive oil
  • 1 cup tahini paste
  • 1/2 cup lemon juice (about 4 lemons)
  • 2 tablespoon tomato paste
  • 1 teaspoons sea salt, or more to taste
  • 1 1/2 teaspoons smoked paprika
  • 1/2 cup sesame oil

Directions

Put chickpeas, garlic, sun-dried tomatoes, tahini, tomato paste, some salt and smoked paprika in a food processor or blender and process until well combined and smooth. Drizzle in sesame oil adding more if you want a thinner consistency. Adjust seasonings to taste. Add more oil, lemon juice or tomato paste if needed. Serve with a drizzle of oil.
